I made these all in the same day, and while it wasn't hard it did take me a while. I started with the sauce. I figured I could make that, put it in the fridge and heat it and finish it off at the last minute. That worked out great! The sauce is SUPER easy.
The dough was more tricky. Maybe because I didn't use my food processor (I didn't want to clean it after... lame I know) or maybe because I made a full recipe plus a half batch because our small group is more than 8 people. This is my go to for buttermilk because I never have it in the house. Great substitute!

This was a good short cut though; chop up the raisins in a little bowl with kitchen shears. Worked great and was much easier than chopping!
I thought coring the apples would be hard, but it was one of the easiest parts. However no matter what I did I kept making a little hole in the bottom. So I took a small scrap of skin and put it on top of the hole. Problem solved.
So the dough... I chilled it in the fridge as directed. It didn't get firm. I put it in the freezer while and it still didn't firm up. I don't know if it was the recipe or me, but this was just a soft, sticky dough!

As you can see my dough kinda fell apart while baking. Not on all of them, but about half. It kinda wilted. However, they tasted great!!! And some people even had seconds.
Think if I did this again I would make the sauce a day ahead and I'd use different dough. I pie crust or pastry sheet or something. To me the dough was a lot of work and didn't work well. It tasted fine, but still. I highly suspect that it was the fault of the cook though! ;-)

These look soooo yummy! I might take your advice about the dough- I always hate making my own and prefer the frozen pastry crust when I can substitute! Will be trying over my Thanksgiving break!
