Let me preface this post by saying I have never been a fan of icing. I usually scrap off my icing on cakes, cupcakes and other desserts and if Gal #2 is around she takes my share. But this recipe was so delightful to the eye I was excited to try it. I had an occasion to make cupcakes, for a friend's bridal shower and thought these would be a perfect way to test this elegant dessert out.
I didn't follow the cake recipe- I made boxed red velvet cake. It is my secret (not so secret) to make a boxed cake and make a homemade icing. It makes everything taste and look homemade. I made the cupcakes the day ahead to ensure they were properly cooled for the icing. I have made that mistake before of being too excited and frosting not-so-cooled cake to end up with a not-so-cool puddle of dessert.
The icing recipe was easy to follow and made A LOT of icing! I didn't use enough of it on my cupcakes and ended up with tons of leftovers. I could have made 4 batches of cupcakes to ice! This is a perfect crowd recipe. If my bridal shower had 45 people there would have been enough icing! It was light and fluffy but held its shape when dipped in the chocolate.
Overall it got rave reviews from others and from me it was ok. As far as icing goes it was good- :o) I loved the idea of the dipped chocolate, but would prefer a sweeter chocolate next time. But if I am making dessert for a crowd this will definitely be it for me!
