April nearly escaped Gal #1 - but I made it with almost no time to spare! I prepared April's menu Friday evening, April 30th. This menu was my creation and I was a little apprehensive that Gal #2 and Gal #3 had given it better reviews than it deserved (they sometimes do that where I'm concerned). But, Mr. #1 declared that this flank steak recipe was much tastier than the one I usually make! That was high praise as the "usual" flank steak recipe is a top ten family favorite.






The pesto filling was very easy to make and gave the steak great flavor. This recipe would be a great one for company as it can be made a day ahead and refrigerated until ready to roast. Unlike Gal #2 and Gal #3, I didn't have any trouble rolling the steak. The technique is one I've witnessed hundreds of times watching my mom make cinnamon rolls - "roll and tuck." Next time, however, I will enlist the aid of a my butcher to butterfly the steak. I understood the technique, I have a great knife - it didn't help. This is a matter best left to the professionals.
The couscous recipe was a "5" on a scale of 1 to 10. Mr. #1 liked it alot - I thought it was dry.
My favorite part of this menu, hands down, was the apple turnovers. They were so easy to make - too easy! I didn't think they could possibly taste as good as bakery turnovers and I was right. They were so much better. Beware, fellow bakers and sweet lovers! Be sure you give them enough time to cool before indulging - the filling is very hot! And like the steak, they can be made ahead and frozen for up to a month. I have four of those lovely creations in my freezer right now!


Here's to May and Gal#3 - bring it on! I've finally figured out how to upload pictures and sign on to this blog...I'm ready to go!
